What kinds of knives do you sharpen?
We currently sharpen double beveled kitchen knives with straight blades. In the future, we would like to expand to sharpen scissors, shears, and serrated blades.
We do not sharpen pocket knives or single bevel blades.
Single bevel blades are rare in the United States and usually found on Japanese (or Japanese inspired) knives. Want to check if your blade is single or double beveled? Compare your blade to the image.
We do not sharpen equipment or machinary blades, such as lawn mower, saws, axes, machetes, etc.
What are your prices?
Blade Length Under 5" $5.00/each
Blade Length 5" - 12" $7.00/each
Blade Length Over 12" $10.00/each
These prices include a heavy-duty paper sheath and sales tax.
Blade length is measured from the top of the handle to the tip of the knife.
How should I transport my knives to you?
Pack your knives safely in a way that you feel comfortable. We've seen everything from shoeboxes, plastic storage containers, newspaper, kitchen towels, even an old pizza box (not recommended).
Our highest recommendation is to roll your knives into a kitchen towel and secure the bundle with rubber bands.
How will I transport my knives home?
When dropping off your knives, you will take your packing material with you.
We will return your knives in a reusable heavy-duty paper sleeve.
How long with sharpening take?
Sharpening will take 30-60 minutes, depending on our queue that day.
We recommend dropping off your knives, running an errand, and returning after receiving your Pickup Notification.
Can I wait while my knives are sharpened?
Sure! Sometimes we're setup in fun places like a farmer's market or shopping center. You're welcome to explore the surroundings or simply sit on a nearby bench until your knives are ready.
For safety, we don't allow folks to wait directly around our booth. This allows us to help other customers as needed and focus on sharpening your knives quickly and safely.
How will I know when my knives are ready?
You will receive a Pickup Notification text message when your knives are ready for pickup. The text message will be sent to the phone number provided during dropoff.
What type of payment do you accept?
We utilize Square secure payments and accept Visa, Mastercard, Discover, and American Express.
We do not accept personal checks.
We are only able to accept cash payments of exact change.
What if I'm unable to pickup my knives?
If you're running late and won't make it back before we close for the day, call or text us right away at 919-627-8686. We will do our best to accommodate a 10-15 minute delay.
If you're unable to return at all, call or text us at 919-627-8686 as soon as you're aware of the issue. We will store them safely and you will be able to pick them up at our next scheduled sharpening.
How do you sharpen knives?
We use a Tru Hone Knife Sharpener that utilizes two pairs of contra-rotating wheels to accurately sharpen both bezels of a knife edge at once.
Our sharpener examines your knife- taking note of the size, shape, style, condition, and material of your blade.
The speed and angle of these wheels is properly adjusted based on these factors.
The sharpener then manually passes the blade over the wheels, using the correct amount of pressure and at the proper speed.
This process is repeated multiple times with the wheels at varying speeds and angles to put a completely new edge on your blade.
How often should I sharpen my knives?
For 90% of home cooks, we recommend sharpening your knives professionally 2-3 times per year.
If you are cooking multiple hours every day, this could be expanded as needed.
Is it possible to sharpen your knives too frequently?
Yes! Sharpening your knife removes material from the blade. Unnecessary sharpening could shorten the lifespan of your knife.
Can you sharpen Japanese/German knives?
Yes, we can sharpen any double beveled kitchen knife.
We sharpen to a 20 degree angle. This falls at the higher end of typical Japanese sharpening angle and the lower end of the typical German sharpening angle. We've found that this angle suits 98% of all home cook kitchen knives.
How long have you been sharpening knives?
You may actually recognize a few of our team members, as we've been taking care of knives in the Triangle since 2013. In fact, if you visited Kitchenworks at University Mall, we've probably sharpened your knives before!
